Carb Jetting

i have heared that you should allways re-jet the carbs when you put on a new exhaust. I have a feeling that the previous owner who put dual "Shadow" exhaust (made locally i believe) did not do this, and i suspect that the mighty twin is runnig failry rich, as the cans are caked with carbon buildup.

1) what are the ramifications of rich running?
2) where do i get the carbs re-jeteed (dyno jet make a starge 1 needle thing)
3) how hard is is (can i do it myself)
4) how much

I also Know that it is better to run rich than lean
as the later causes to much heat build up which can
lead to melting upper cylinder components.
